Supersized Cocktails – The Atlantic (January/February 2010)

by Chef Brad

THE ADIOS MO-FO is among the most popular drinks sold at Howl at the Moon, at Universal CityWalk in Los Angeles. A friend and I ordered one on a recent visit, then watched the bartender deftly hoist and upend four bottles at once—rum, gin, vodka, and blue Curaçao—letting loose long strands of colorful liquid, as if from the udder of a magical cow.

Food Makers Quietly Cut Back on Salt – WSJ.com

by Chef Brad

Amid rising government pressure and consumer concern, food makers are taking a new tack in their long-running effort to sell products with less salt. Instead of offering foods labeled as low salt that few people eat, they are gradually reducing the salt from some of their most popular items—and not making a big fuss about it on the label.

Danny Meyer Marathon: From Shake Shack to Eleven Madison Park to Maialino and More – WSJ.com

by Chef Brad

This city has two rulers. The Hon. Michael Bloomberg is its elected mayor. Its equally honorable but unelected emperor, Danny Meyer, holds court without pomp at 10 palaces in New York County, aka Manhattan. These are restaurants admired round the world, restaurants ranging from the humblest hamburger stand to the higher reaches of Michelin-starred, plate-of-the-art fine dining.

A more mellow Bourdain

by Chef Brad

Anthony Bourdain, the bad-boy chef who snorted his way through a so-so cooking career before writing a snarky, no-holds-barred, best-selling memoir, “Kitchen Confidential,” in 2000, has a confession to make.
