It’s always a gas to watch television shows such as VH1’s “I Love the 80s” series to witness how our culture changes over the course of a decade and what, if anything, remains the same. It’s neat to be reminded of once-new ideas we can’t imagine life without (what did we do before Post-it notes?) and the crazes we can’t believe we ever embraced (“Miami Vice” dress-alikes, I’m talking to you).

I was talking with my wife the other day and, and as always, found her insights and wisdom very worthwhile. She has been a life coach for 15-plus years and has an ability to see the real issues, not just those on the surface. She really caught my attention with the comment, “What you practice, you get good at.”

Here's a stick-to-your-ribs meal that's healthy, high in protein and fiber, and low in fat and calories. To save prep time, use canned beans instead of soaking dried beans overnight. This recipe calls for cooking boneless, skinless chicken breasts, but it's also a great way to use up leftovers. Just about any type of protein will work, including rotisserie chicken, turkey, ground beef, or vegetarian meat substitutes. Have a delicious low-fat and cholesterol-free Almond Macaroon for dessert.

It’s no secret that within the last 12 to 16 months, the restaurant industry has cut 104,000 jobs. The cuts have led operators to look for growth opportunities where the unemployment rate has stayed relatively slim. While California was the land of promise during the Gold Rush of the 1840s-50s, it’s the Midwestern and Northeastern states that are now giving operators a vision for the future.
